One of Japan's amusingly-named hamburger restaurant chains, Freshness Burger, have added a veggie burger to their menu. The 'burger' is basically a chunk of tofu. It has avocado, tomato, lettuce and a kind of barbeque sauce. Being just tofu, it tastes a bit bland. It also tastes like it's been microwaved. I wasn't a fan of the sweet barbeque-style sauce. I think you'd be better to use one of the other sauces that Freshness Burger has in their condiment corner. According to their website, it is suitable for vegetarians. However, it is not suitable for vegans as it has dairy and egg ingredients.
Other places to get (better) veggie burgers in Japan: Homework's have decent vegetarian burgers. They have stores in Azabu-Juban , Hiroo and "The Pantry" in Roppongi Hills and Marunouchi . Deva-Deva Cafe in Kichijoji have some different kinds of vegan veggie burgers. Loving Hut in Yotsuya have some nice vegan burgers. The Pink Cow in Shibuya/Omotesando do a good vegetarian burger. The Great Burger in Harajuku have a vegetable burger on their menu. You can get some mediocre veggie burgers at Hard Rock Cafe . Mos Burger (another funny name) has the "kinpira burger" which is kinpira (carrot and burdock root) on a bun made from rice.
